Olive oil 1 1/2 tsp
1 Diced sweet onion
3 cloves garlic, minced
3 cup mushrooms, white or baby portabellos or a mix
1 cup carrots sliced
2 cup chopped broccoli
salt pepper
2 Tsp fresh Ginger grated
2 Tsp cumin
1/8 tsp Cinnamon
5 C Vegetable broth
2 C Kale leaves / Spinach is ok too
1- In large saucepan, heat oil. Medium heat.
Add onion, garlic and saute 5 minutes.
2 - Add mushrooms, carrots, broccoli .
Stir in salt and pepper.
3- Add Ginger, Turmeric, Cumin, Cinnamon.
Saute 1-2 minutes.
4- Add Broth - Stir.
Bring to a boil... Reduce to Medium low . Simmer 10-20 minutes.
5- Just before serving, add the Kale/Spinach . cook until wilted.
Serve with salt, pepper and a dash of lemon juice.

This is similar to my version of a good, healthy veggie soup - made it yesterday with kale, leeks and added cannellini beans. Yours sounds great - I'll try it next time as I like the idea of adding fresh ginger. You can never go wrong with these types of soups!

I am making it tonight, I forgot the mushrooms but I have plenty of ginger :)
