Quick Bread

Orange Chocolate Chunk Quick Bread

  
YIELD: 1 loaf
PREP TIME: 15 minutes
COOK TIME: 

INGREDIENTS:


1 1/2 cups all-purpose flour + 2 tablespoons
1 teaspoon baking powder
1 teaspoon ground ginger
1 cup granulated sugar
2 large eggs, lightly beaten
1/4 cup vegetable oil
1 1/2 teaspoon pure vanilla extract
1 cup milk
zest of 1 orange
3/4 cup dark chocolate chunks

DIRECTIONS:

1. Preheat oven to 350 degrees F. Spray a glass loaf pan with non stick spray and set aside.
2. In a large large bowl, whisk together 1 1/2 cups all-purpose flour, baking powder and ground ginger. In a second bowl, whisk together sugar, eggs, oil, vanilla, milk and orange zest. Pour wet mixture into the dry and stir until combined. Toss dark chocolate chunks with remaining 2 tablespoons of flour then gently fold them into batter.
3. Pour batter into loaf pan and bake for 55-65 minutes, or until toothpick inserted into the center comes out clean.
4. Allow bread to cool completely before removing from the pan. Slice and serve!

Baking Time !

Although I don't have much of an appetite these days, I do still like something Sweet now and then.
Instead of buying those stale and overly crunchy sweets at the supermarket, I realized that while I have no interest in cooking, I do enjoy baking still.
There is something almost Zen-like about measuring and sifting and stirring and waiting .. with a sweet reward at the end and sometimes soothed nerves and a more quiet feeling.

Bread Puddings are my favorite easy to make, delicious treats that are fun because whatever is in the house can become an ingredient.
I have bread, chocolate chips and I have sugar and cinnamon.

So  here you have it ... 

 Bread Pudding with Chocolate Chips ..

4 cups bread, cubed or just torn up into small pieces
2 eggs, beaten
2 cups milk
1/4 cup butter, melted
1/2 cup sugar
1 teaspoon cinnamon

1/2 a bag of chocolate chips or as much as you like
 

 1- Place bread pieces  in a 1-1/2 qt casserole dish.
 2- Mix together  ingredients and pour over bread.
 3- Bake@ 350 for 40-45 minutes.
 Enjoy!

Weepy

I started out my day with some tears.
I woke up feeling OK ..
It is still difficult to wake up to an empty house and I can't really lie there and Think.
But I hopped ... ok, I crept out of bed, wrapped myself in woolies and turned up the thermostat and went into the kitchen where the sight of snow , birds , and grey skies met me .. along with a coffee pot full of hot coffee ..
Dragging myself, along with the biggest coffee cup I could find, I came in here and turned on the computer and there was this commercial ..
You can watch television commercials on your Yahoo page and not feel that you are actually buried in snow in the middle of nowhere with no one and nothing but silence  !!!!

So I sat down with my huge cuppa and decided to look at the SuperBowl commercials.

It only took seconds ... I was weeping ... the puppy , the horse, love ... sob sob ~~~

 Super Bowl Puppy
