My Cooking Days Are Coming to an End !

We took a walk yesterday and bought a beautiful piece of Salmon , I wanted to roast it with Hoisin sauce, which makes such a delicious dish with barely any work at all. If you call smearing some Hoisin on a filet and squirting some lime juice on it Work.
But still, it is hot. Summer is here. The Cooking around here is coming to an end until Fall. ( April/May)
So tonight we had the salmon with Potato salad and The Husband picked up some ice cream for dessert.
(I am also back on antibiotics for the cough/throat thing so ice cream is practically medicine!)
So here is how I make my Hoisin Sauce Salmon and I hope you try it and tell me if you enjoyed it. If you hated it, don't tell me, I will feel awful.

Roast Salmon w/ Hoisin Sauce

1 lb filet of Salmon
Half of a lime
1 tablespoon of Hoisin sauce
Salt Pepper
Sesame oil

Preheat oven to 350ºF

Squeeze some lime juice into bottom of baking dish.
Add a few drops of Sesame oil.. smear it around.

Put Salmon filet into oven proof baking dish.

Sprinkle a little salt, a little pepper and lime juice on top.
Spread the Tablespoon of Hoisin sauce over the filet.
Toss on some capers if you like them .. we do .

Cover dish with foil, roast for half an hour or more according to thickness of the filet.
After it looks pretty much done, take the foil off and let the top brown, I just put the oven on Broil for that..maybe 3-5 minutes will do it.

Mar del Plata is about 3-4 hours from Buenos Aires. We have not been there yet.

My husband went fishing in Alaska last year and we still have oodles of Salmon packed into our freezer. I am always looking for different ways to cook it up. This looks delicious! I will give it a try, thanks!
