Couscous ( a recipe)

Couscous dinner has been one of my mainstays for the past year or so.
Cooking for one can be a nice way to spend some time or it can be annoying because it is only for you and you aren't hungry anyway and have no taste for anything.

I made couscous the other day ... just for something to do .. put it in the fridge to sit until I felt like eating.

They are easy- I use the box of Far East couscous.

Bring water and a bit of oil to a boil, add the couscous and turn off the heat. Add the flavor pack/or not. I never use the flavor pack. Until now.

I had a drawer of vegetables getting old in the fridge.
I have several boxes of couscous ... because I never remember that I already have it so I buy another box.

who remembers how much couscous they have ??

OK, this is how you do it :

* 1 box couscous .. any flavor will do .. the flavor  is a separate envelope, you don't even have to use it.

* Bring water to boil, with a drop of olive oil in it.

* Add contents of box, stir , turn off heat, put lid on it ..

*Chop:
Red onion or / and scallions
Whatever veggies are in the fridge ..

*I added broccoli and celery with red onion*

When that is all cooked and tender, throw some flavor on it.
I used Sesame Oil and a little Soy Sauce.

Toss the whole thing around in the pot and let it sit.
Don't refrigerate unless you feel you must or like it cold.
It is good warm ( microwave works fine) or cold ( I like cold better in Summer)


Let it sit at room temp or into the fridge, it is perfect alone or with anything you like ..
I love couscous with fish .. salmon roasted under the broiler ... yummm.

And there you have it. A meal that can actually be made and ready for the table in about 15-20 minutes.

Love couscous too - you've now made me hungry for some so I think I'm heading to the kitchen to make some as I sip a glass of vino! Just took a nice almost chilly walk, then filled my bird feeders, pruned my Buddleia (butterfly) bush - now's the time, and fed my neighbors's kitty Nuala whilst he's at the coast for the weekend.
I'm ready for a restful evening - will light fire and watch Doc Martin.
